Thengai Paal Kootu (Mixed Vegetables in Coconut Milk Gravy)

Dish: Thengai Paal Kootu
Today's dish from Sujatha's blog is a super simple, yet very delicious mixed veg curry cooked in coconut milk. Veggies are cooked in coconut milk and flavored with sambar powder -- it's that simple, but the flavor both these ingredients infuse into the veggies is just amazing.

I wanted to speed up the process a little, so I precooked the veggies in the microwave and then finished cooking on the stove with coconut milk. This dish is very similar to the Kerala vegetable stew, but the sambar powder makes this a completely different dish.

Thengal Paal Kootu (Mixed Vegetables in Coconut Milk Gravy)

Ingredients:
Potato - 2 medium, peeled and cut into long slices
Carrot - 1 medium, peeled and cut into long slices
Green Peas - ½cup
Onion - 1 small, thinly sliced
Ginger - 1" piece, finely grated
Sambar powder - 2tsp
Turmeric - 1tsp
Coconut Milk - 1½cups
Coconut Cream - ¼cup
Salt - to taste

Method:
  • Microwave the veggies until just tender.
  • Heat 2tsp oil in a saute pan; add the onions and grated ginger, cook till onions are just translucent. Don't let the onions change color.
  • Next add the other veggies along with coconut milk, sambar powder, turmeric and salt. Simmer till the veggies are cooked through.
  • Finally add the coconut cream and cook for 2~3 minutes.

    1. Valli, you can use thick homemade coconut milk instead. I used store bought light coconut milk, so added some coconut cream to make the curry a little thick and creamy.

  6. Liked d crocheted table piece - did u do that pavani ? N d kootu looks good.. Was expecting it to have a lil more gravy, but guess this is d consistency..

    1. Kalyani, bought those crochet pieces at a garage sale :-) Kootu is dry because my husband doesn't like white gravies, so made it a little on the thick side.
